This sweet vegan Chocolate Pudding with Berries is easy and sure to please. Add some tart berries to balance out the sweetness.
If you are craving something sweet with chocolate, this Chocolate Pudding with Berries will satisfy you. A little of this pudding goes a long way. I used Erythritol, which is an all natural sweetener with zero calories. I have also included all natural stevia, which has no calories as well. This dessert includes protein packed tofu and anti-oxidant rich cacao.
Chocolate Pudding with Berries
- 14 oz. silken tofu
- 1/2 cup cacao powder
- 1/3 cup erythritol
- 1 ½ tablespoons vanilla extract
- 7 drops stevia – I used vanilla cream
- 1 date, optional
- your favorite berries
- Mix all the ingredients, except the berries in a food processor until well combined. The date adds a richness, but isn’t necessary if you are watching calories and sugar.
- Top with your favorite berries.
*This pudding also tastes good in a smoothie. Add 1 scoop Vega One 1 tablespoon of peanut butter, unsweetened almond milk, and handful of spinach.
