These sweet, smoky, and spicy Maple Chipotle Black Bean Lettuce Wraps with Mango Salsa are loaded with flavor. Perfect for a light lunch!
I have been in a lettuce wrap mood lately, especially taco lettuce wraps. They are perfect for this time of year when soup doesn't satisfy the same way it did in the winter months, and salads are my seasonal go-to meal.
I love anything that is sweet and spicy: dark chili chocolate bars, curry, vegetables with coconut milk, sweet and spicy BBQ sauce - you get the idea.
For these Maple Chipotle Black Bean Lettuce Wraps, I have combined smoky, spicy chipotle with sweet maple syrup. Then, I made a sweet and spicy mango salsa to accompany the beans.
Oh man, talk about heaven! You may want to double this recipe, it is so good.

🧾 Ingredients
- Chipotle peppers and adobo sauce: Add a smoky spicy flavor. If you're corn intolerant, like I am, make sure to read the labels. Some brands have corn oil.
- Maple syrup: Adds sweetness.
- Vegetable broth: I like to use low-sodium vegetable broth so that I can control the amount of sodium.
- Tamari: I like to use low-sodium gluten-free tamari so that I can control the amount of sodium. You could also use soy sauce, liquid aminos, or coconut aminos.
- Black beans: You could also use pinto beans.
- Olive oil: For cooking the onions.
- Onion: I used a yellow onion, but a white onion or red onion would be fine as well.
- Salt and pepper: Enhances flavors and adds flavor. I like to use sea salt.
- Lettuce leaves: I used red leaf lettuce. Use any large lettuce leaves you like.
- Avocado: Adds creamy flavor and balances out the spicy flavors.
- Mango salsa: I used my Homemade Mango Habanero Salsa. You could use a store-bought mango or pineapple salsa.

🔪 Instructions
Step 1: Chop chipotle peppers and put them in a bowl.
Step 2: Add maple syrup, vegetable broth, and tamari.
Step 3: Rinse black beans and add them to the bowl.
Step 4: Heat a skillet on medium heat. Add olive oil and onions. Cook until translucent.
Step 5: Add black bean mixture. Cook until the liquid is dissolved.
Step 6: Add salt and pepper. Mash some of the beans, if desired.
Step 7: Pile the black bean mixture on top of lettuce leaves, along with avocado slices, and mango salsa.

Maple Chipotle Black Bean Lettuce Wraps with Mango Salsa
Ingredients
- 2 chipotle peppers in adobo sauce
- 2 tablespoons adobo sauce
- 4 teaspoons maple syrup
- ¼ cup low sodium vegetable broth
- 2 teaspoons low sodium gluten free tamari
- 15 ounce can black beans
- 1 tablespoon olive oil
- ¼ cup chopped onion
- Salt and pepper to taste
- Lettuce leaves - I used red leaf
- Sliced avocado
- Mango Salsa
Instructions
- Chop chipotle peppers and put in a bowl. Mix in maple syrup, vegetable broth, and tamari.
- Rinse beans and add to sauce. Set aside.
- Heat olive oil in pan and add chopped onion. Cook until translucent.
- Add bean mixture and cook until liquid is dissolved. Add desired amount of salt and pepper. At this point I mashed the beans slightly because I wanted them to soak up more sauce, but that's up to you.
- On lettuce leaves, pile on maple chipotle black beans, sliced avocado, and mango salsa.
