Have you tried acai in one of it's many forms yet? If you like the flavor of sweet tart raspberries, then I think you'll like acai.
Acai is a reddish-purple berry which is native to the rainforests of Central and South America. It contains antioxidants, fiber and heart-healthy fats.
Acai comes in many forms: puree, juice, powder, tea, and pills. I have only had the frozen puree and the juice. I may have to check out the powder one of these days since it would be convenient for traveling.
Acai contains fat, so it goes rancid quickly, which is why you will not find fresh acai berries in the U.S.
Acai Banana Popsicles
I was inspired to make these Acai Banana Popsicles after making some Chocolate Covered Peanut Butter Frozen Yogurt Bites. I had frozen treats on the brain.
Since I love acai smoothie bowls, I thought popsicles would be another great way to use acai. What a great idea, indeed!
These vegan popsicles are sweet and fruity. They are like eating a smoothie in popsicle form.
Oddly enough, I have never bought frozen acai packets or any other form of it myself. That's because my husband loves to surprise with them. Some women like to receive flowers, I prefer anything food or blog related. (The foodie that I am.)
Today he brought me three different containers of hummus and last week he brought me a 12 pack of kombucha. I can't tell you how many times I've used his surprises in recipes.
Whenever anyone gives me food, I immediately go into brainstorming mode. It actually happens quite frequently in our neighborhood. I have a few neighbors who grow produce in their gardens.
There's a program called Market on the Move in Arizona where you get up to 60 lbs. of produce for $10. That's when I go into major brainstorming mode. I have to rack my brain to come up with ways that I can use said vegetable as the main ingredient in a recipe so that I use as much of it as possible.
Recipes like soup, pickled vegetables, hot sauce, and anything that you can freeze are the types of recipes that work the best. I have to admit, I have a love / hate relationship with the program. There are times when we leave with about 18 bell peppers, 20 tomatoes, 30 zucchini, 3 bags of oranges, and more. My husband doesn't eat as many veggies as I do, so I find myself scurrying to make recipes before they expire.
Of course we give a bunch away, but I like to try to use as much of the produce as possible because I love saving money. Now if only I had a large freezer, I could cook a bunch of meals for later...

Acai Banana Popsicles
Ingredients
- 2 (3.5 ounce) packets of acai
- 1 large banana
- 1 cup unsweetened plain coconut milk yogurt
Instructions
- Blend all ingredients in a Nutribullet or high speed blender.
- Pour into 3 ounce bath cups. Put a popsicle stick into each one and freeze until solid. To get the paper cup to release easily, pour hot water into a shallow container and put popsicle in it. It should slide right off!
