This Southwestern inspired Black Bean Quinoa Salad with Avocado Cilantro Dressing is packed with protein and flavor.
Since making my Quinoa Tabbouleh awhile back, I have been in a quinoa mood. Quinoa is high in protein and filling.
It works well in place of rice or couscous. I also like it because it is easier and faster to cook than rice.
For this Black Bean Quinoa Salad with Avocado Cilantro Dressing, I included all of my favorites: avocado, corn, orange bell pepper, grape tomatoes, onion, cilantro, quinoa, jalapeño, and black beans.
For the creamy Avocado Cilantro Dressing I blended avocado, cilantro, jalapeño, cumin, olive oil, lime juice, and water. If you want even more spice, you could use a serrano pepper instead of the jalapeño.

Black Bean Quinoa Salad with Avocado Cilantro Dressing
Ingredients
Avocado Cilantro Lime Dressing
- 1 avocado
- ¼ cup cilantro
- ¼ cup lime juice
- ¼ cup olive oil
- 1 teaspoon jalapeño
- ¼ cup water
- ¼ teaspoon cumin
Black Bean Quinoa Salad
- ½ cup quinoa
- 1 cup water
- ½ cup chopped cilantro
- ½ cup grape tomatoes quartered
- 1 avocado
- ¼ cup chopped onion
- ½ cup chopped red or orange bell pepper
- 1 tablespoon finely chopped jalapeño
- ½ cup corn
- 15 oz. can black beans
- Salt
Instructions
- Avocado Cilantro Lime Dressing: Blend ingredients until smooth.
- Black Bean Quinoa Salad: Rinse quinoa thoroughly. It has a coating of saponins, so the quinoa will taste bitter if not rinsed. Place water and quinoa in a saucepan and bring to a boil. Reduce to a simmer, cover and cook until all the water is absorbed, about 10-15 minutes.
- Chop cilantro, tomatoes, avocado, onion, pepper, and jalapeño. Put in a bowl with the quinoa.
- Add corn, black beans, salt and avocado cilantro lime dressing. Mix thoroughly.
