These baked Chipotle Hummus Taquitos are a healthy appetizer or meal. They can be on the table in about 20 minutes!

These Chipotle Hummus Taquitos are one of the easiest meals you can make. Serve them as an appetizer or eat them as a meal.

How to Make Chipotle Hummus Taquitos

First, make the chipotle hummus. You could use store-bought, but it literally takes about 5 minutes to make. It is also way cheaper than store-bought.

If you do use store-bought, you want a hummus that has thick consistency.

Mix chickpeas (garbanzo beans), tahini, a chipotle pepper, lemon juice, garlic, and spices in a food processor.

Normally, I add water to my hummus for a creamy consistency, but for this recipe you'll want to leave it out. The added water doesn't work in taquitos.

Wrap corn tortillas in a wet paper towel and heat in the microwave for 1-2 minutes. This helps them to become more pliable.

Spread 2 heaping tablespoons or so on a tortilla. Roll tightly away from you.

Brush with olive oil. Place seam side down on a parchment lined baking sheet. Repeat with the rest of tortillas

Bake for 16 minutes, flipping half way through.

Can You Fry Taquitos?

How to Roll Taquitos

Rolling taquitos is super easy. It's just like rolling a burrito but easier because you aren't tucking in the sides.

Spread about 2 tablespoons of filling on the tortilla, and roll it tightly away from you. Set it seam side down on a parchment lined baking sheet.

You don't want to overfill the taquito or it will be harder to stay together.

What To Serve with Taquitos

I ate my taquitos with salsa, vegan sour cream, sliced avocado, jalapeño, chopped tomatoes, and a squirt of lime juice. You could eat your with guacamole or whatever your favorite dipping sauce is.

Ingredients

  • 1 batch chipotle hummus (do NOT add water when making hummus)
  • 8 corn tortillas
  • Olive oil

Instructions

  • Preheat oven to 350°.
  • Wrap the tortillas in paper towels and microwave for 1-2 minutes to make the tortillas pliable, if needed.
  • Scoop 2 heaping tablespoons of chipotle hummus on tortilla and spread on a corn tortilla. Roll tightly. Repeat with the rest of tortillas.
  • Brush each taquito with olive oil and place on a piece of parchment paper on a sheet pan. Bake at 350° for 8 minutes, flip and bake another 8 minutes.
