This refreshing Citrus and Pomegranate Salad marries together citrus, pomegranate, and mint.
I was gifted with some beautiful grapefruits and oranges recently (which is a wonderful recurring theme in my life - I love free food), so I knew I had to make a salad. Since I have some pomegranate seeds in my freezer, I figured, why not make a Citrus and Pomegranate Salad.
I usually don't eat sugar on grapefruit, because I love their tart flavor, but for recipe sake, I thought I'd break convention. Feel free to add more sugar than the suggested amount.
Since I don't normally add sugar to my grapefruit, this was quite sweet for me. Actually, after making this salad, I think I may add a little sugar from now on, especially if it has mint, lime zest, and lime juice mixed with it.
I just happen to have a mint plant in my front yard (another gift, I believe), so I had to add it's wonderful fresh flavor to this salad.
Key limes are one of my favorite go-to sweet additions. You could substitute another lime variety, but by using key limes you may not need as much sugar.

Citrus and Pomegranate Salad
Ingredients
- 1 medium grapefruit peeled and ends trimmed
- 1 medium orange peeled and ends trimmed
- 2 tablespoons pomegranate seeds
- 1 tablespoon + 1 teaspoon sugar
- 3 tablespoons + 1 teaspoon mint leaves divided
- 1 teaspoon key lime zest
- juice from 2 key limes (2-3 teaspoons)
Instructions
- In a coffee grinder or a Nutribullet with milling blade, blend sugar, mint leaves - reserving 2 tablespoons, and lime zest.
- With a pairing knife cut along the membrane of both sides of the grapefruit. Let the segments fall into a bowl. Repeat with the orange.
- Chop the rest of the mint leaves. Add them to the bowl with the orange and grapefruit. Add sugar mixture, pomegranate seeds, and lime juice. Toss to combine.
