This Coconut Mango Parfait came about because I had just made a 2 Ingredient Mango Cake and I wanted to vary how I was eating it. I'm not a big dessert person, unless it has chocolate in it, and even then I only eat small amounts of it.
Eating mango cake in a parfait makes it slightly healthier because you're eating less cake and more mango and coconut yogurt.
How to Make Coconut Mango Parfait
In a parfait glass or clear bowl (so that you can see the layers), layer cake, coconut yogurt or whipped coconut cream, and chopped mango. Repeat layers. Can This Parfait Be Made Ahead of Time?
For this Coconut Mango Parfait I would not recommend making it too far in advance or the cake will get soggy. If you want soft cake, (maybe that's your thing - think bread pudding texture) then have at it and make it the day before.
I had some leftover parfait from the day before and it wasn't too soggy.
How To Serve Coconut Mango Parfait
Serve in parfait glasses, clear bowls, or tall shot glasses that can hold a spoon. Shot glasses are perfect for a party where you want to serve small dessert bites.
