Cranberry Apple Chickpea Salad Sandwich

This sweet and savory Cranberry Apple Chickpea Salad Sandwich is perfect for a potluck or a light lunch.

There are times when you want to make an easy foolproof recipe that everyone will love. A recipe that doesn’t take a lot of time or prep work.

This is one of those recipes. I have been putting off going to the grocery store and knew that I had enough ingredients in my fridge to get me through a few more days.

This Cranberry Apple Chickpea Salad Sandwich was inspired by the Waldorf salad. The typical Waldorf salad has a sweet, crunchy and tangy flavor. It has walnuts, grapes, celery, and mayo, served on a bed of lettuce.

I have veganized it in the past, which I will have to post soon, since it is such an easy recipe. This recipe is similar to a Waldorf salad in that it has the tanginess of the vegan mayo, the sweetness of the dried cranberries and apple, and the crunch of pecans.

I made a Cranberry Lime Dressing to bring the salad together. It has a sweet tangy taste from the key limes, agave syrup, cranberry sauce, and vegan mayo.

If you can’t find key limes, you could use another variety. I love key limes because they are sweeter than the typical limes in the store.

Serve this salad on a bed of lettuce or on your favorite toasted bread. Being gluten free, my bread choices are limited. Here the salad is pictured on a multigrain brown rice English muffin.

Ingredients

Cranberry Lime Dressing

  • 1 tablespoon cranberry sauce
  • 1/4 cup vegan mayo
  • 2 tablespoons key lime juice
  • 1 teaspoon agave syrup

Chickpea Salad

  • 15 oz. garbanzo beans (chickpeas)
  • 1  apple I used Gala, chopped
  • key lime
  • 3/4 cup pecans chopped
  • 3/4 cup dried cranberries
  • 1/4 cup grated carrots
  • salt to taste
  • 16 slices gluten free bread
US Customary - Metric

Instructions

  • Cranberry Lime Dressing: Mix all ingredients until smooth and creamy.
  • Chickpea Salad: Drain and rinse beans. Set aside in a bowl.
  • Add juice of the key lime to the chopped apple so that it keeps its color.
  • Mix the dressing and the rest of ingredients in with the beans. Serve on toasted bread or by itself.

    I have never tried anything like this before. Would it work without the chickpeas?

      You could substitute something else, but I wouldn’t just make it without the chickpeas and not add anything else back in, because I think it might be too sweet. (Of course all my recommendations will be vegan, like using white beans, soy curls or tofu.)
