My latest favorite cocktail has been the mojito, with the Tangerine Mojito at the top of my mojito list. I can’t seem to get away from making them.
Yes, I changed things up and made a Piña Colada, a couple of margaritas, and some daiquiris, but here we are again with another mojito.
I was hesitant to make this Cucumber Mojito, because I was concerned it might come out too cucumbery. No that isn’t a word, but it’s my blog, so I am sticking with it.
I was pleasantly surprised at the results. This drink was not what I expected. It is light and refreshing, and not too cucumbery at all.
This Cucumber Mojito is a great way to stay hydrated while enjoying a cocktail at the same time!

You May Need:
- Muddle mint leaves in sugar until a paste forms. Set aside.
- Blend cucumber, rum, and agave syrup. Put through a metal strainer. Pour over ice.
- Mix in mint leaves and sugar. Top with club soda.
