The inspiration came from seeing grapes coated in different things on the internet (like nuts, dried fruit, and cheese) and a recipe that I have brewing in my head at the moment for curried tofu salad. So here is a marriage of the two.
First and foremost: yes, the brand of vegan cream cheese matters! There is a (nameless) brand that is really creamy and not as thick as Tofutti, which is my personal preference.
For this recipe, since you need to roll the grapes in vegan cream cheese, you really want a thick consistency in your vegan cream cheese.
The combination of the sweet grapes, crunchy peanuts, coconut, and curry are a marriage made in heaven. It is like a curry salad in appetizer form - sans the tofu.
If you are making this for a party, coat the grapes in the peanuts last. It is more pleasing to the eyes, and they will stay crunchy longer. So do not roll the grapes in the peanuts the night before!
