These Thai inspired spicy Curry Stuffed Jalapeños will be the hit of the party! They are quick and easy to make.
There are many recipes out in cyberland where jalapeños are stuffed with cream cheese and bacon. Being vegan, those ingredients obviously would not be included in my recipe!
I knew I wanted a recipe that had Thai ingredients. So, being the mad scientist that I have been as of late, I started mixing some of my favorite ingredients: curry paste, Tofutti cream cheese, and peanut butter.
Out of the experimenting these Curry Stuffed Jalapeños were born. This may sound like a strange combination, but trust me, it is really good!
The only thing I cannot state enough is WEAR GLOVES while making this recipe! My fingers are still burning because, not only did I handle the jalapeños during the cooking process, but then I ate them with my bare hands as well. (Silly girl!)
Even though these make a great appetizer for a party, I would give guests a fork or cut them into smaller sizes and put a toothpick in them so guests can easily eat them.
(Of course, you could give them gloves - that would make an interesting conversation starter.)
Curry Stuffed Jalapeños

Curry Stuffed Jalapeños
Ingredients
- 4 tablespoons vegan cream cheese
- 1 teaspoon red curry paste -I used Thai Kitchen
- 1 tablespoon + 1 teaspoon peanut butter
- 5 jalapeños
Instructions
- Preheat oven to 350°.
- Mix all ingredients with a fork or in a food processor.
- Put latex or some kind of disposable gloves on and slice jalapeños in half, and stuff cream cheese mixture into jalapeños.
- Bake at 350° for 25-35 minutes, or until jalapeños are tender.
