I have used carrots in many recipes, but I think grilling them is my favorite way to make them. I made them even better by adding a rosemary balsamic reduction. Yum!
I could eat these Grilled Carrots with Rosemary Balsamic Reduction as a meal they are so good. This is unusual for me to say considering normally I only like carrots in meals like spring rolls, frittata, a juiced drink, or a stir fry.
Eating them by themselves is usually not my first choice.
When making the balsamic reduction, it is important to attend to it - by that, I mean stirring it the whole time. It will burn easily. Do not walk away from your reduction!
If you have access to a grill, these will probably taste even better. I was not in a grilling mood, so I used the next best thing, a cast iron grill pan.
I swear, everything tastes better on cast iron. The salt and olive oil added a lot of flavor to the carrots, but then the rosemary balsamic reduction took the dish over the top.

Grilled Carrots with Rosemary Balsamic Reduction
Ingredients
Rosemary Balsamic Reduction
- 1 cup balsamic vinegar
- 1 (6") long stem of rosemary
Carrots
- 8-10 carrots peeled and sliced
- 2 tablespoon olive oil
- salt
Instructions
- Rosemary Balsamic Reduction: In a saucepan, combine balsamic vinegar and rosemary stem.
- Bring to a boil, then reduce to a simmer, stirring the whole time. Simmer for 10-15 minutes to thicken sauce. Remove rosemary stem.
- Carrots: Peel and slice carrots, making uniform pieces, so that they cook at the same time (and look pretty).
- Pour olive oil in a grill pan, making sure to oil raised edges. Add carrots and sprinkle with salt. Cook on medium high heat until grill marks appear.
- Flip and grill the other side until grill marks appear, or until softened.
- Serve with rosemary balsamic reduction.
