Jicama Slaw is good an alternative to cabbage slaw - whether you don't like cabbage or you are looking to try something new. This slaw makes a nice light side dish or an addition to a taco. I added sriracha for a touch of spice.

Jicama Slaw
Ingredients
- 1 tablespoon lime juice
- 1 tablespoon brown rice vinegar
- 2 tablespoons vegan mayo
- 1 teaspoon sriracha
- ¼ red onion chopped
- ½ cup carrots julienned
- 2 cups jicama julienned
Instructions
- Mix lime juice, brown rice vinegar, vegan mayo, and sriracha in a bowl.
- Mix the dressing with the onion, carrots, and jicama.
