What is a raw vegan diet? What do raw foodists eat?
A raw vegan diet is one where people eat no animal products or by-products (no meat, dairy, eggs, or honey). It excludes foods heated above 118 °F (48 °C ). People on a raw vegan diet eat unprocessed and some minimally processed foods. They consume cold pressed oils, fermented foods like kimchee and miso, and raw nut milks and nut butters. I have gone through phases of eating a raw diet during my sixteen years as a vegan. I now have a balance of raw and cooked food. The appliances listed are good to have even if you are not going on a 100% raw diet.
Examples of what raw foodists eat and how they may prepare food includes:
- zucchini noodles instead of pasta noodles
- lettuce leaves instead of tortillas
- finely chopped raw cauliflower instead of rice
- freshly juiced drinks and smoothies
- frozen bananas to make “ice cream”
- super foods like maca, cacao, goji berries, and acai
- sprouted nuts, seeds, and legumes
- dehydrated crackers and vegetable chips
- cold raw soups
- dates to bind nut mixtures for pie crusts, bars, and other desserts
Here are some kitchen appliances for a raw food diet that you will need:

1. Dehydrator – I love my dehydrator for making crackers, sun-dried tomatoes, dried fruit and vegetables. If you have an excess of vegetables, dehydrating is a great way to use them up before they spoil. You can reconstitute the veggies later and add them to soup or crackers.
2. Spiralizer – With a spiralizer, you can make zucchini or yellow squash noodles (or “zoodles”). This appliance creates long ribbons, angel-hair thick strands, and spaghetti-like spiral strands.You can cut, shred, slice and spiral. I have yet to get a spiralizer, but it is on my wish list of kitchen appliances. I use a vegetable peeler or a mandoline to make my zucchini noodles.
3. Mandoline – A mandoline is a wonderful appliance for cutting the thickness you want. You can make chips, jicama taco shells, thinly sliced cucumber for roll-ups, and more. Since I do not own a spiralizer, I use my mandoline to slice the zucchini lengthwise, then slice it into strips with a knife.
4. Juicer – A juicer is the granddaddy of all the raw food appliances. Why? Because this bad boy gives you a ton of nutrients in the form of a juice. Juice your favorite fruits and vegetables and you get a nutrient rich drink. I like to juice about 3 fruits to 2 vegetables, to make the sweet fruits override the taste of the earthy vegetables.
5. Sprouting lids and glass jars – Sprouting jars are great for making your own living sprouts (not just raw, but living – meaning they are still growing and thriving). Just follow the directions on the jar, and you will be growing your own in no time. If you already have mason jars, you can purchase lids. I have made sprouts many times. It is super easy to do.
6. Vita-Mix or blender – I have an ordinary, run-of-the-mill blender, but if you are serious about getting into a raw food diet, I would seriously consider investing in a Vita-mix. It is the king of blenders in the blender world. I know people who absolutely love theirs. It is powerful, durable, and versatile.
7. Nutribullet – I love my Nutribullet. I use it every morning to make my go-to smoothie of greens, bananas, Vega All-in-One, and water. It is easy to clean and it is portable. It has an attachment to grind nuts and seeds, which is handy for grinding flax and chia seeds. If you are cooking with small quantities, it can be used in place of a food processor or blender, with certain tasks.
8. Food Processor – Next to my Nutribullet, this is probably my second most used appliance in my kitchen. I make hummus, soup, crackers, sauces, salsa, and more.
