About Me

Hi, I am Willow Moon. I am the recipe developer, author, and photographer at Create Mindfully. I create easy vegan gluten free recipes that the whole family will love.
I have been vegan since 1999. I am also gluten free because I have a gluten intolerance, but the recipes on this website can easily be made with wheat products.
Before starting Create Mindfully, I was an elementary school teacher. There were many days I had little energy to spend much time in the kitchen.
I struggled with overwhelm around dinnertime. Many times, I reached for frozen dinners or unhealthy choices because I didn't have a plan in place.
I had too many other things on my mind to have the bandwidth to worry about dinner every single night.
Since becoming a food blogger, I started planning out meals ahead of time, mainly out of necessity that comes with the job. I noticed that I was not only was less stressed around dinnertime, but I was saving money and wasting less food.
My goal in creating the Mindful Plate Club is to provide an easy-to-follow plan so you don't have to scroll endlessly looking for recipes or spend time creating a shopping list.
A typical week would include Vegan Mushroom Lasagna, Portobello Fajitas, Tofu Sloppy Joes, Vegan Enchiladas, and Refried Bean Tacos.
Another week might be Tofu Bell Pepper Stir Fry, Vegan Gyros, BBQ Jackfruit Sandwiches, Black Bean and Corn Chili, and Caramelized Onion and Mushroom Pasta.
Yes, but you may want to look at the available recipes first. All the recipes on Create Mindfully are already vegan and gluten free. And since I found out I also have a corn intolerance, many are made without corn.
However, if you need recipes that are low in sugar for example, you may want to see my Vegan Keto category to see if there are enough recipes for you to become a member.
