These Mini Peanut Butter Banana Breakfast Pizzas are a fun new twist on breakfast. They also make a great snack!
I am pretty predictable when it comes to breakfast. In the hotter months (most of the time in Tucson), I have a fresh green juice or a smoothie with frozen bananas, greens, Vega One, peanut butter, and water.
During the colder months or on days that I actually feel like cooking for breakfast, I will have a Tofu Scramble or Tofu Frittata.
There are days when I like to have a change in my breakfast regime. Today I decided to make these Mini Peanut Butter Banana Breakfast Pizzas.
They are like having mini toasts, but instead in mini pizza form.
These mini pizzas are sweet and savory with a crunch from the granola and cacao nibs. They would work well for a brunch potluck, because they are so small and guests can eat a variety of foods.
I used a muffin tin to make the pizza crusts. If you don't have one, you could make free form pizza crusts or use a cookie cutter.
I left the instruction "per pizza" because I only make a few of these at a time since I am the only one eating them. I have a wonderful pizza crust that I buy where I can mix up a batch of pizza dough, make small amounts at a time, and put the rest in the fridge.

Mini Peanut Butter Banana Breakfast Pizzas
Ingredients
- Gluten free pizza dough mix - I used Namaste
- 1 teaspoon peanut butter
- Drizzle of maple syrup
- Pinch finely shredded coconut
- Pinch vanilla almond granola
- 1 teaspoon chopped banana
- Pinch cacao nibs
Instructions
- Make / cook pizza crust according to directions in a muffin tin.
- Spread peanut butter on pizzas. Drizzle maple syrup on top of peanut butter.
- Sprinkle coconut flakes and vanilla almond granola on top of maple syrup.
- Place chopped banana and cacao nibs on pizzas. Serve.
