Make it ahead of time, or make just the chia jam ahead of time to save time.
I was inspired to make this yogurt parfait after making my Chocolate and Peanut Butter Swirl Dessert Dip, which used the peanut butter yogurt part of this recipe. It was so good that I ate it by the spoonful for breakfast one day.
I figured it would taste great in a vegan parfait. Boy, was I right! If you're a peanut butter and jelly fan, I think you'll love this recipe too.
I read somewhere awhile back that most people have about 15-20 recipes in their repertoire. Before starting Create Mindfully, I think mine was around that number as well.
For breakfast I am a creature of habit. It's usually a smoothie with spinach, an all-in-one powder, vegan yogurt, unsweetened almond milk, a frozen banana or other frozen fruit, and many times chia seeds, sesame seeds, or peanut butter.
Sometimes I make a Tofu Frittata or Tofu Scramble, but smoothies are the norm.
After starting a blog I have branched out in the breakfast department, although I eat those recipes at other times of the day.
I think I've eaten more pancakes post-blog than the last almost 20 years or so of being vegan, and that's with only 4 pancake recipes! That just goes to show how little I eat pancakes. I'm more of a healthy breakfast kind of gal.
I don't like to crash and burn from all the sugar and carbs, which is the reason for eating the less healthy breakfast recipes at other times of the day than the morning.
When I was a teacher, we would have potluck on payday Fridays, where each grade level would take turns bringing the food. As a gluten free vegan, there weren't a lot of options for me.
I was happy to get some fruit, tortilla chips, and hummus or salsa - yes, those were served for breakfast. Vegan refried beans were a major score.
I was always grossed out to see a spread of sugary donuts or cake, which happened often. Even if they would have been vegan and gluten free I wouldn't have eaten any. That's not the way I want to start my day.
So if you're like me, and like to start your day off right with a healthy breakfast, this yogurt granola parfait is for you. To make it even healthier, replace the sweetener with stevia.

Ingredients
Peanut Butter Yogurt
- 1 cup unsweetened coconut milk yogurt
- ¼ cup + 2 tablespoons peanut butter
- 3 tablespoons maple syrup
- ½ teaspoon vanilla extract
- Pinch salt
Parfaits
- ½ cup Peanut Butter Granola
- 6 tablespoons Blueberry Chia Jam
Instructions
- Peanut Butter Yogurt: Mix ingredients.
- Parfaits: In two bowls, layer peanut butter yogurt, peanut butter granola, and blueberry chia jam. Then, layer again.
