I really love making my own granola. It is super easy, and you can control the ingredients.
I am a creature of habit when it comes to breakfast. I usually have a smoothie with frozen banana, berries, spinach, and Vega All-in-One Shake, but it is nice to switch things up a bit.
I've already made a Vanilla Almond Granola and a Maple and Molasses Granola, so I thought it was time to make some Peanut Butter Granola. I also love to make my own trail mix.
This would go well in a trail mix with some roasted peanuts and dried fruit, like dried cranberries or dried cherries. PB & J trail mix anyone? Or, if you want more indulgence, you could add some chocolate chips and dried banana or banana chips.
I am a big peanut butter lover. If I had to choose one food to be left with on a dessert island, I would choose a sweet and spicy peanut sauce.

How to Make This Recipe
Combine peanut butter, maple syrup, and coconut oil. Microwave to thin it out. Add salt.
Add mixture to rolled oats. Spread oats on a parchment lined baking sheet. Bake until golden.

Peanut Butter Granola
Ingredients
- ¼ cup + 2 tablespoons peanut butter
- 1 tablespoon coconut oil
- 2 tablespoons maple syrup
- 2 cups gluten free rolled oats
- Salt
Instructions
- Preheat oven to 325°.
- Combine all wet ingredients. Microwave for 20-30 seconds or heat in a saucepan on stovetop until mixture is a liquid. Add salt.
- Pour mixture over oats. Mix thoroughly.
- Spread oats on a parchment lined baking sheet. Bake at 325° for 10 minutes. Stir, then bake another 10-15 minutes, or until golden brown.*
