This sweet, rich Piña Colada is a refreshing drink for a hot Summer day. It pairs nicely with spicy foods.
Add coconut milk to pineapple and rum, and I am in tropical Piña Colada heaven. Beware, though this drink is really filling with the coconut milk.
This is one of those drinks you probably want to have with a light dinner. You could replace the full fat coconut milk with a light coconut milk, but I don’t think it would be as rich and delicious.
This cocktail is sweet and rich.

- 2 oz. light rum
- 1/2 chopped fresh pineapple
- 1/4 cup coconut milk
