This sweet, savory Pomegranate and Cucumber Noodle Salad is not only visually appealing, but has many health benefits as well.
During the hotter months, I crave a lot more salads. In fact, I have even been eating a huge bowl of spring mix with homemade Vegan Thousand Island.
I guess my body just wants a lot of greens. (Or maybe it is that I recently made homemade Vegan Thousand Island and just cannot get enough of it.)
To take a break from my huge bowl of greens, I decided to make this Pomegranate and Cucumber Noodle Salad. It has elements of sweet and savory from broccoli, cucumber, carrot, and pomegranate arils. It also has a savory turmeric tahini dressing.
It has been my goal to get more turmeric into my life. Making a turmeric tahini dressing is a great way to get some in, even though this dressing doesn't quite get me up to the daily quota that I am looking for.
In addition to this dressing, I make a turmeric tea, and also add it to almond milk. Turmeric has many health benefits, like reducing inflammation.
If you haven't hopped on the spiralizer bandwagon yet, you may want to consider doing so. A spiralizer is great for making noodles out of your favorite vegetables.
I love to use the vegetables to replace pasta, so that I consume less carbs.
Some spiralizers can spiralize a ton of different vegetables, as well as make several different noodle shapes. The one that I got is great because it is a small handheld version, which fits nicely into a kitchen drawer.
The only drawback is that it doesn't spiralize a large variety of veggies. It also only has two noodle sizes. It is less expensive though, so if you don't plan on using it as much, than it's worth it.

Here is the spiralizer I own. I love it because it takes up very little space.
If you're like me and don't plan on using it very often, it's great because you don't have a large gadget taking up space in your kitchen.
Pomegranate and Cucumber Noodle Salad
Ingredients
- 2 cups spiralized cucumber 1 cucumber
- ½ cup spiralized carrot 1 carrot
- ½ cup chopped broccoli
- ¼ cup pomegranate seeds
- 2 tablespoons hemp seeds
- Turmeric Tahini Dressing
Instructions
- Layer spiralized cucumber and carrot noodles in bowls. Top with chopped broccoli, pomegranate seeds, hemp seeds, and dressing.
