I have talked before about how I like to go to Market on the Move, which is a program here in Arizona where you get up to 60 lbs. of produce for $10. I went last week and came back with 70 organic cucumbers, along with a bunch of other produce. Immediately my brain started firing on all cylinders brainstorming what I would make with all these cucumbers.
Then, I realized that even though I had a ton of ideas on how to use cucumbers, I didn't want to inundate my home page with cucumber recipes. After all, I just posted a Cucumber Mojito recently, and a Spicy Cucumber Salad not long before that.
Luckily I have been juicing on a daily basis, and cucumbers are one of my go-to items in my green drinks. I go through 2-4 cucumbers a day with my green drinks, so I knew that would be one way to work my way through the box of cucumbers.
As I make a ton of cucumber recipes, I will spare all of you a home page full of cucumber recipes and instead try to spread them out a bit. First up, I have for you this Raw Cucumber Dill Soup, mainly because I have been gravitating towards more raw foods lately. It has a little bit of heat from the jalapeño, but mainly you taste cucumber and dill. I added avocado for some creaminess.

Raw Cucumber Dill Soup

Raw Cucumber Dill Soup
Ingredients
- 2 large cucumbers (4 cups)
- 1 avocado (½ cup)
- 1 tablespoon fresh dill
- ¼ cup cilantro
- 2 tablespoons lemon juice
- 2 teaspoons low sodium gluten free tamari
- 3 ½ teaspoons chopped jalapeño
Instructions
- Process all ingredients in a food processor until smooth. Chill and serve.
