Roasted Broccoli and Tomato Tortilla Pizza

Quick and Easy

Tortilla pizzas have been my latest go-to meal, especially this Roasted Broccoli and Tomato Tortilla Pizza. I love the taste of roasted broccoli, so putting it on a pizza was a no-brainer.

This is a quick easy meal, making it perfect for a weeknight meal. This pizza would also make a great appetizer for a party. The sauce can be whipped up in less than a minute. The hardest part is waiting for the broccoli and tomatoes to roast, and that only takes twenty minutes or so.

Roasted Broccoli and Tomato Tortilla Pizza

I used sun-dried tomatoes and roasted tomatoes for the sauce along with some Italian seasonings. It’s a great way to whip up a sauce for a single serving pizza.

Sun-dried tomatoes are one of my must have at all times pantry staples. When I am low on groceries, but don’t feel like venturing out in the world, a pasta with sun-dried tomatoes and a few other pantry staples is always a quick and easy meal.

I know a couple who live in northern Arizona who get snowed-in quite frequently. If the guy who plows roads and driveways isn’t available, they have to make due with what they have stocked up.

If it was me, I would have a really well stocked pantry including a large freezer to stock up on fruit and vegetables. But then, I like to have quite a few choices of what to cook.

Roasted Broccoli and Tomato Tortilla Pizza

One of the reasons I love using tortillas for a pizza crust is because they are fast. My go-to pizza mix takes about two hours to rise, so this is a nice fast alternative. The other reason I love tortillas is because they are thin, so you get a good topping to crust ratio. I am not big on a ton of breading in any dish.

Ingredients

  • 1 cup chopped broccoli
  • 1 cup sugar plum or cherry tomatoes sliced in half
  • Olive oil
  • 2 tablespoons sliced onion
  • Salt and pepper
  • 1 tablespoon sun-dried tomatoes
  • 1/2 teaspoon Italian seasoning
  • 1  tortilla - I used brown rice

Instructions

  1. Preheat oven to 400°.
  2. Place broccoli and tomatoes on a sheet pan lined with parchment, aluminum, or a silicon sheet. Drizzle olive oil on top. Roast at 400° for 15-20 minutes. Add sliced onions and roast another 5 minutes. Let cool slightly.
  3. Take half the tomatoes and blend along with sun-dried tomatoes, Italian seasoning, and salt and pepper in a Nutribullet or food processor.
  4. Lower heat on the oven to 350°, and bake tortilla for 1-2 minutes, or until just starting to crisp up.
  5. Spread tomato mixture on tortilla. Place broccoli, onions, and the rest of tomatoes on top. Bake for 2 minutes at 350°, or until edges are crispy.
