This Smashed Chickpea and Avocado Sriracha Salad Sandwich was inspired by pantry ingredients, which is often the case when I create a recipe. It is because I like to put off going to the grocery store. It forces me to be creative using ingredients that I have on hand.
If you have chickpeas and are stocked on spices and condiments, chances are you can have a chickpea salad sandwich for your next meal.
This vegan sandwich reminds me of tacos because of the sriracha sauce and cumin.

This meal comes together in minutes. It is perfect for packing into a lunchbox or when you come home tired after a long day at work and need a healthy meal fast.
I smashed the chickpeas by hand, which is great for taking your aggressions out, but you could use a food processor and pulse until you get the your desired consistency.
One reason that I made this easy sandwich is I am still recovering from a broken ankle. I have talked about it quite a bit on the blog because it has been a focus in my life that I can’t ignore.
The easier the recipe, the better. I had to sit down when I was smashing the chickpeas because standing for too long hurt so much. Anyone out there who has broken an ankle knows what I am talking about.
Recently I talked to one of my friends who broke hers years ago. It was nice to talk to someone who understands. Many people I talk to wonder why I am not walking normally yet. I am currently using a walker that I am working on weaning myself off of, but it is slow going because my walk is more of a penguin hobble, and it hurts if I walk a lot.
It’s nice to have a blog where I can get out my frustrations too, even if I delete some of what I am feeling! Just writing it down helps.

Smashed Chickpea and Avocado Sriracha Salad Sandwich
- 15 ounce can of garbanzo beans (chickpeas)
- 1 avocado (approximately 1/2 cup)
- 2 tablespoons vegan mayo
- 1 tablespoon sriracha sauce
- 1 tablespoon minced onion
- 2 teaspoons key lime juice (1 key lime)
- 1/4 – 1/2 teaspoon cumin
- 1/4 teaspoon paprika
- Salt and pepper
- For the sandwich
- Slices of tomato
- Sprigs of cilantro (optional)
- Gluten free bread, toasted*
- Smash chickpeas with a fork or pulse in food processor.
- Add avocado and smash into chickpeas.
- Add the rest of ingredients and mix well.
*Note: I personally think gluten free bread (at least the brand I get) tastes much better toasted.
