Yes, I have created yet another dip recipe. I just had to post this Smoky Bean Dip now, being that Super Bowl is right around the corner.
I have to admit that I am really bad about posting timely recipes - meaning recipes in time for Thanksgiving, Valentine's Day, etc. Holidays always feel like they come up on me really fast.
By the time the holiday rolls around, I hate the pressure of coming up with something quickly for said holiday. You should also know that I don't do traditional meals on most holidays, or I wouldn't feel pressured to create a recipe.
Most bloggers are planning what they will be making for family and friends ahead of time, but not me. I do things a little differently around here. I have been known to eat vegan sushi, falafels, or enchiladas on Thanksgiving and Christmas - you get the idea.
Plus, this blogging thing is supposed to be fun, not stressful, right!
However, when it comes to the Super Bowl, I have it covered. I think it is mainly because of the types of snacks that are served for Super Bowl. I do not watch sports, so that is definitely not it. I just love dips, Loaded Vegan Nachos, and other game day snacks.
I actually made this recipe because I went out of town last weekend and needed a few cold items to pack. The hotel had a fridge, but no microwave. Since I didn't want to go grocery shopping (no surprise to those of you following me), I had to whip up something from my pantry.
I love the challenge of coming up with something on the fly with ingredients that I already have. Maybe someday I'll take requests for a few strange ingredients to include in a recipe like they do on "Chopped"...
Not only did I use this as a dip, but I also used it on penne pasta. I added a little nutritional yeast, some vegan sour cream, and some hot sauce, and tada; a new dish was born.
Note: if you do use this as a pasta sauce, you will need to add some water or vegan sour cream when cooking the leftovers to bring it back to life. The sauce thickens when it is refrigerated with noodles.
