Now that I created my Roasted Tomato Sauce, I don't think I will use a jarred sauce again.
It was gone in two days! It is rich and creamy, and extremely addicting. I was up at 4 a.m. this morning to make more!
A lot of people on a raw food diet eat zucchini noodles. I have gone on a raw food diet a few different times for stretches of time, but prefer a balance of raw and cooked foods.
Since I don't own a spiralizer (a kitchen tool that allows you to create thin noodle and spiral shapes out of your vegetables), I thought I would use my mandoline for these Squash Noodles with Roasted Tomato Sauce. The mandoline also allows you to cut vegetables thinly, just not in spiral or noodle shapes.
I steamed the squash noodles for a few minutes, but you could also eat them raw. I used yellow squash, but zucchini works well too. They are a great, healthy alternative to processed noodles.

Squash Noodles with Roasted Tomato Sauce
Instructions
- Slice yellow squash or zucchini on mandolin with the 1/16 setting going the long direction of the squash.
- Using a knife, cut long, thin strips.
- Steam for a few minutes until crisp tender (optional).
- Add Roasted Tomato Sauce.
