How to Make This Recipe
First, make the almond bacon. Mix liquid smoke, paprika, tamari, maple syrup, apple cider vinegar, and coconut oil. Add sliced almonds and bake until crispy.
Next, make the tofu feta by mixing olive oil, red wine vinegar, lemon juice, oregano, basil, nutritional yeast, salt and pepper. Add drained and chopped tofu. Let sit overnight.
For the dressing, mix balsamic vinegar, olive oil, mustard, maple syrup, vegan mayo, and salt and pepper. Whisk until there's no clumps.
Layer herb spring mix in a bowl with sliced strawberries, almond bacon, and tofu feta. Pour dressing on top and mix.

Ingredients
Dressing
- 1 tablespoon mustard - I used yellow mustard
- 2 tablespoons balsamic vinegar
- 3 tablespoons extra virgin olive oil
- 1 tablespoon maple syrup
- 1 tablespoon vegan mayo
- Salt and pepper
Salad
- 6 cups herb salad mix or spring mix
- 5 strawberries, sliced (1 cup after slicing)
- 1 cup tofu feta
- ½ cup almond bacon
Instructions
- Dressing: Whisk all ingredients until well blended.
- Salad: Layer all ingredients in a bowl and serve with dressing.
