These crunchy Sun-Dried Tomato Basil Cucumber Roll-Ups make a great appetizer. They are healthy and filled with flavor.
One of my favorite combinations for hummus and pizza is sun-dried tomato and basil. Here I doubled up two of my favorite dips with the combination.
Combined with crispy cucumber, this makes a light, refreshing appetizer.
I am really bad at not using the guard on my mandoline - until today, that is. I had a small accident while making these Sun-Dried Tomato Basil Cucumber Roll-Ups.
So, please do not make my mistake - use the guard on your mandoline!

How To Make This Recipe
- Slice cucumber on a mandoline lengthwise.
- Spread sun-dried tomato and basil hummus on entire slice of cucumber, but not too thick.
- Spread sun-dried tomato basil pesto on top of hummus.
- Roll cucumber tightly away from you.
- Stick a toothpick in the middle to hold it together.
How Long Will These Last?
These are best eaten the same day, but the hummus and pesto will last up to 5 days in airtight containers in the fridge.

Here's the mandoline that I own. It's great because it has a guard to protect your fingers. You can adjusts the thickness of the cut as well.
Sun-Dried Tomato Basil Cucumber Roll-Ups
Ingredients
- 1 cucumber
- ¼ cup Sun-dried Tomato and Basil Hummus
- ¼ cup Sun-Dried Tomato Basil Pesto
Instructions
- Peel cucumber and cut off ends. On a mandoline, set the blade for 1/16" and slice the cucumber lengthwise. Alternatively, you could use a large vegetable peeler.
- Spread sun-dried tomato and basil hummus on the whole slice of cucumber - not too thick.
- Next, spread sun-dried tomato basil pesto on top of hummus.
- Roll starting at the small end of the sliced cucumber. Stick a toothpick in, and repeat with the other slices.
