I put this Sun-Dried Tomato Basil Pesto under the dip category because it is thick like a dip. I did not use a lot of olive oil, but I did include the oil from the sun-dried tomatoes.
If you want to use it as a sauce on noodles, you may want to add more oil. Sun-dried tomatoes are one of those additions to a recipe that always makes me happy. My Sun-dried Tomato and Basil Hummus is probably my favorite hummus recipe that I have made so far.

Sun-Dried Tomato Basil Pesto
Ingredients
- 2 cups basil
- 8 cups spinach
- 1 tablespoon + 1 teaspoon olive oil
- 1 clove garlic
- ¼ cup pine nuts
- ¼ cup nutritional yeast
- ¼ cup + 2 tablespoons sun-dried tomatoes in oil
Instructions
- Mix all ingredients in a food processor until smooth. When putting sun-dried tomatoes in, make sure to include some oil.
