One of my favorite things in life is a good curry. My favorite is green curry, but I will eat any type.
I ate a delicious vegetable tofu curry today, in fact. It was at a restaurant I had never been to before, called Char Thai in Tucson, Arizona. If you are ever in Tucson, check them out.
So, because I love curry so much I like to incorporate it into my recipes whenever I can, like when I stuffed jalapeños with a mixture of curry paste, vegan cream cheese and peanut butter.
That may sound like a strange combination, but trust me, it was delicious!
For this Thai Grilled Corn with Roasted Peanuts, I grilled corn, dipped it into a mixture of red curry paste and coconut milk. Then I dipped it into crushed roasted peanuts.
The results were delicious and filling!
Thai Grilled Corn with Roasted Peanuts

Thai Grilled Corn with Roasted Peanuts
Ingredients
- 1 tablespoon Thai Kitchen Red Curry Paste
- ¾ cup lite coconut milk or full fat coconut milk
- ½ cup roasted peanuts
- Salt
- 6 ears fresh corn
- Coconut oil
Instructions
- Mix curry paste and coconut milk in a bowl. Set aside.
- Grind peanuts in a coffee mill or food processor. Set aside.
- After husking, coat corn with coconut oil and grill corn on a grill or grill pan. Turn corn after browned, getting grill marks on each side.
- Dip corn in curry mix, then roll in ground peanuts. Salt to taste.
