Sun-dried tomatoes are one thing that I try to always keep in my pantry. They add a nice sweet, chewy addition to anything you add them to. I especially love them on pizza. I also enjoy them in sun-dried tomato pesto pasta and sun-dried tomato and basil hummus.
This Tofu Feta and Sun-Dried Tomato Pizza with Vegan Tzatziki is part of a slew of Greek recipes that I made recently. I realized awhile back that if I have a weekly theme of recipes, I can crank out more than I would if I didn't.
For instance, the vegan tzatziki was used in about four different recipes. It really works well for me to cook this way - as long as I don't get sick of the ingredients.
It's kind of like using leftovers, but instead I plan out how to use the same ingredients in a variety of dishes. I also try to keep my amounts down so that I don't get tired of any one dish.
I have found that even the best dishes can turn into ones that I grow tired of after two or three days of eating it. You can probably gather that I am the only one eating them, so I always have leftovers.
I wish I would have thought of doing this style of meal planning when I first started blogging. I probably would have almost twice as many recipes! As it stands, I have about forty-five recipes waiting to be published.

Tofu Feta and Sun-Dried Tomato Pizza with Vegan Tzatziki

Here's the pizza mix I used to make the pizza. It has a wonderful yeasty flavor.
Tofu Feta and Sun-Dried Tomato Pizza with Vegan Tzatziki
Ingredients
- Pizza crust mix - I used Pamela's
- ¼ cup + 2 tablespoons Tofu Feta
- 2 tablespoons chopped sun-dried tomatoes
- 1 ½ tablespoons chopped Kalamata olives
- 2 tablespoons chopped red onion
- 2 tablespoons chopped artichokes in water or olive oil
- 3 tablespoons Vegan Tzatziki
Instructions
- Preheat oven to 450°.
- Make pizza according to instructions. Par-bake, if directions say to do so. (Pamela's says to cook the crust 8-10 minutes.)
- Top crust with tofu feta, sun-dried tomatoes, olives, red onion, and artichoke. Cook about 8-10 minutes at 450°, or until crust turns golden brown and crispy.
- Top with vegan tzatziki and serve.
