I had a take-out burrito bowl at a local restaurant awhile back as a birthday freebie. It wasn't even worth my time or gas to get it - and it's in walking distance! (Albeit a long walk.)
Three out of the four salsas were bubbling the next day, which is what happens when salsa goes bad. The ingredients were disappointing. The menu read that it would have grilled vegetables, beans, rice, lettuce, and guacamole.
There were no grilled vegetables in sight, and the guacamole was minimal. It was a good thing that I didn't pay for it because I would have been irate.
I've had other bad experiences at restaurants lately, even restaurants that I've been to over and over again. It's just not worth it to me to get excited about going out just to be disappointed. I'd rather eat at home where I know the food will be good.
Not only is this Vegan Burrito Bowl good, but the cool thing is that you can customize it to your liking. No extra charge for guacamole here.
Even though this is a recipe, it is quite flexible. If you don't like tomatillo salsa, which is in the Creamy Avocado Green Sauce, use your favorite salsa instead. Don't like red pepper? Leave them out.

You May Need:
Vegan Burrito Bowl
- 2 cups cooked rice - follow directions on package
- 1 cup spicy black beans or regular black beans
- 1 cup corn
- 1 cup chopped red pepper, raw or steamed
- 1 cup chopped tomato
- 2 avocados, chopped
- Salt and pepper, as needed*
Creamy Avocado Green Sauce
- ½ cup tomatillo salsa
- ½ cup unsweetened plain coconut milk yogurt
- ¼ cup mashed avocado
- Pickled Peppers and Onions
- Kalamata olives, sliced
- Creamy Avocado Green Sauce: Mix all ingredients.
- Vegan Burrito Bowls: Divide rice between four bowls. Top with the rest of ingredients. Top with Creamy Avocado Green Sauce.
