Normally I am a creature of habit when it comes to breakfast. Not only do I love my morning Chocolate Banana Smoothie, I look forward to it. Not to mention I do not like to create and shoot recipes first thing in the morning. My stomach doesn’t have the patience for it.
Since I am a food blogger and don’t want to have an empty breakfast category, I usually make my breakfast recipes later in the day and eat them for lunch or dinner.
Sweet, Creamy and Crunchy
This Vegan Fruit and Yogurt Breakfast Parfait came about because I got on a granola making kick. Whenever I make granola, I like to eat it not only as a cereal, but also in vegan yogurt parfaits.
This parfait is sweet, creamy and crunchy. It has a variety of textures, which makes my mouth happy.
I always have frozen fruit in my freezer. Usually it’s raspberries, cherries and bananas. Today I had blueberries and pomegranate seeds.
I got the pomegranate seeds from a program here in Arizona called Market on the Move. You make a ten dollar donation and get up to 60 lbs. of produce. The last time that I went I got a very large box of pomegranates.
Since there were so many, like forty or some other ridiculous amount, I decided to freeze the seeds. I have to admit that I am happy they are in my freezer now, but at the time I wasn’t having much fun getting the seeds out of that many pomegranates!
I was eating really low carb for many months so the pomegranate seeds were not on my list of fruit to eat. They have been sitting in the freezer for quite awhile. Now that I am eating normally again I am ready to include them in some recipes.
I like to juice them and strain the pulp. I did just that for some Raspberry Pomegranate Chia Jam. The juice also makes a great addition to a cocktail.
Pomegranate seeds are wonderful in sweet and savory salads, like my Sweet Potato, Broccoli, and Pomegranate Quinoa Salad. It has a Turmeric Tahini Dressing, which I love to pair with sweet foods.
Easy to Make
Vegan yogurt parfaits are really easy to make. The only thing that takes a little effort, which is barely any effort at all, is the granola. You could always use store bought if you are in a hurry.

Vegan Fruit and Yogurt Breakfast Parfait
- 1 cup coconut or soy yogurt
- 1/4 cup Coconut or Vanilla Almond Granola
- 1/2 cup fresh or frozen blueberries
- 1/4 cup pomegranate seeds
- coconut flakes for garnish
- In a bowl, layer coconut yogurt, granola, blueberries, and pomegranate seeds. Then, layer again. Top with coconut flakes.
