Are you looking for a Vegan Menu for July 4th?
Today I have put together a menu that has influences from around the world. I chose traditional 4th of July dishes that have an ethnic twist. I love food from other countries, which is how I like to cook.
All the dishes can be made ahead of time, thrown in a cooler, and transported to a park. Throw the veggie burgers and corn on the grill, and dinner is served.
I will be watching fireworks from my roof, which has been a tradition for many years. I prefer to stay away from long lines of cars with people trying to get home. It isn’t quite the same from my roof as seeing the fireworks up-close and personal, but at least I don’t have to battle crowds. Also, the park nearby has fireworks other times of the year, and it is only a five minute walk to see those.

Jicama Slaw – This slaw has sriracha to add a spicy kick.
Thai Grilled Corn with Roasted Peanuts – This grilled corn is smothered in a curry sauce, then dipped in roasted peanuts.
Mexican Fruit Salad – This refreshing salad has watermelon, cantaloupe, mango, pineapple, jicama, key lime juice, and a touch of spice.
Lentil Burger with Roasted Garlic Mayo – This veggie burger reminds me of falafel, because it has a similar texture.
Mojito – I have been on a mojito kick recently. This is a light, refreshing cocktail. It is perfect for a BBQ or picnic.
