Vegetable Salad with Avocado Cucumber Dill Dressing
Ingredients
Avocado Cucumber Dill Dressing
- 1 avocado
- 1 ½ cups chopped and peeled cucumber
- 2 tablespoons fresh dill
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 small clove garlic
- ¼ cup water
- Salt and pepper
Salad
- ¼ cup cherry tomatoes sliced in half
- 2 tablespoons pepitas pumpkin seeds
- ¼ cup radish sprouts
- 1 tablespoon red onion thinly sliced
- 2 tablespoons thinly sliced carrot
- ¼ cup cucumber peeled and thinly sliced
- 2 cups green mix - I used Super greens
- ¼ cup Avocado Cucumber Dill Dressing
Instructions
- Avocado Cucumber Dill Dressing: Blend all ingredients in a blender or Nutribullet.
- Salad: Pile all ingredients on a bed of greens, and dress with Avocado Cucumber Dill Dressing.

Plus, pumpkin seeds take a better photo! I was originally going to use sunflower seeds, which aren't as colorful. (The things I have learned with a year of bogging under my belt!)
