Apple Oatmeal Cookies

Ingredients: 1 cup gluten free rolled oats ½ cup apple sauce 2 tablespoons peanut butter 1 tablespoon maple syrup ½ teaspoon cinnamon

Ingredients: Pinch fresh grated nutmeg or ground nutmeg  ½ teaspoon salt  ½ apple diced (about ½ cup) - I used Granny Smith ½ cup walnuts chopped

Preheat oven to 350°. Mix rolled oats, apple sauce, peanut butter, maple syrup, cinnamon, nutmeg, and salt. Mix well. Add in diced apple and chopped walnuts.

Form balls and place on a parchment lined baking sheet. Press down to flatten (these do not rise). Bake for 18-20 minutes, or until golden brown.
