BBQ Lentil Sandwich

Ingredients:    1 cup dry orange lentils also known as red lentils  2 cups water  ½ cup chopped onion  1 tablespoon olive oil

Ingredients continued:    4 Ingredient Sriracha BBQ Sauce Sriracha Coleslaw - half the batch Gluten free buns

Sriracha Coleslaw:   ½ cup vegan mayo  2 tablespoons sriracha sauce  2 tablespoons sugar  2 tablespoons apple cider vinegar

Ingredients continued:   5 cups tricolor coleslaw mix green cabbage, red cabbage, and carrots Salt and pepper

Mix first five ingredients. Add coleslaw and salt and pepper. Mix well.

Put lentils and water in a pan over medium high heat. Bring to a boil. Reduce to a simmer and cook for 15 minutes. Add more water, if needed. Remove from heat.

 Cook onions until translucent. Add cooked lentils and 4 Ingredient Sriracha BBQ Sauce. Cook until heated through.  Serve on toasted buns with Sriracha Coleslaw.
