Beet Pancakes

Ingredients: – 1 ¾ cup gluten free 1:1 baking flour – 2 tablespoons beet root powder – 1 teaspoon baking powder – 1 tablespoon flax meal or ground chia seeds – Pinch salt

Ingredients: – 2 cups soy milk – 2 tablespoons maple syrup – 1 teaspoon vanilla extract – Vegan butter

Add all dry ingredients to a large mixing bowl. Whisk to combine. Add wet ingredients and mix well.

Heat a griddle or frying pan on medium heat. Add vegan butter. Pour about 3 tablespoonsful of batter onto the pan.
