Carrot Cake Overnight Oats

Ingredients:   ½ cup gluten free rolled oats  ½ cup unsweetened almond milk or soy milk  ½ cup grated carrots  ¼ teaspoon cinnamon  ¼ teaspoon nutmeg

Ingredients continued:    ¼ teaspoon allspice  Pinch salt  1 tablespoon maple syrup  2 tablespoons chopped walnuts or pecans  1 tablespoon shredded coconut

Place rolled oats, almond milk or soy milk, shredded carrots, spices, maple syrup, and salt in a mason jar. Let sit overnight.

Top oats with more shredded carrots, if desired, walnuts or pecans, and shredded coconut.
