Cashew Mayo

Ingredients: – 1 cup raw cashews – 2 tablespoons olive oil – 2 tablespoons lemon juice – 2 tablespoons apple cider vinegar – ½ teaspoon mustard powder

Soak cashews in hot water for 15 minutes or room temperature water for 4 hours. Drain water.
