Chickpea Salad Sandwich
Ingredients: ¼ cup vegan mayo 1 teaspoon mustard ¼ cup sweet pickle relish Salt and pepper 15.5 ounces garbanzo beans 1 cup diced celery ¼ cup chopped red onion 10 slices bread
Mix vegan mayo, mustard, sweet pickle relish, and salt and pepper. In a separate bowl mash chickpeas, then add to dressing.
Add diced celery and chopped red onion and mix well. Spread on toast with your favorite toppings like lettuce, tomato, and pickles.
