Chocolate Covered Peanut Butter Frozen Yogurt Bites (Vegan)

Ingredients:         Peanut butter filling  1 cup unsweetened coconut milk yogurt  ¼ cup + 2 tablespoons peanut butter  3 tablespoons maple syrup  ½ teaspoon vanilla extract  Pinch salt

Ingredients continued: Chocolate coating  ¾ cups chocolate chips  1 ½ tablespoons coconut oil

   Peanut butter filling: Mix peanut butter filling ingredients. Pour 2 tablespoons in each ice cube slot of a ice cube tray. Freeze until solid.

  Chocolate coating:  Heat a couple of inches of water in a pot. Place chocolate chips and coconut oil in a heat safe dish over pot filled with water.

  Turn down the heat. Sir to combine. Remove from the heat when the chocolate is nearly melted.

     With a fork, dip a peanut butter yogurt bite into chocolate. Place on a parchment lined tray. Repeat with each yogurt bite. Freeze.
