Crispy Baked Tofu with Peanut Sauce

Ingredients: 14 oz. extra firm tofu olive oil 1/2 cup peanut butter 1/2 cup full fat coconut milk 1 tablespoon rice vinegar

Ingredients continued: 1 tablespoon sesame oil 1 tablespoon tamari 1 clove garlic 1 teaspoon sriracha sauce 1 tablespoon maple syrup

Blend peanut sauce ingredients.

Cut tofu into cubes. Brush peanut sauce on tofu and place on an oiled parchment lined baking sheet.

Bake at 400° for 20 minutes. Flip tofu, and bake another 23 minutes or until browned and crispy on the outside.
