Cucumber Mint Sorbet

Ingredients: – 2 English cucumbers (approx. 4 cups chopped) – 3 tablespoons fresh mint leaves – ½ cup  sugar – ½ cup water

Ingredients: – 2 tablespoons lime juice – ¼ teaspoon lime zest – 2 tablespoons vodka  - to inhibit freezing and to add a softer texture

Peel cucumbers. Deseed if you aren't using English cucumbers. Place sugar and water in a saucepan. Heat on medium heat until the sugar is dissolved, or a few minutes.

Put all ingredients in a food processor and blend until smooth. Freeze. Once frozen, blend again in food processor and refreeze. This will give a nice, soft texture.
