ELT (Eggplant Bacon, Lettuce, and Tomato) Sandwich

Eggplant Bacon Ingredients: 1 eggplant 1/4 cup tamari 1/4 cup maple syrup 1/4 cup apple cider vinegar 2 teaspoons paprika 1 tablespoon + 1 teaspoon liquid smoke 1 tablespoon olive oil

ELT Sandwich Ingredients: 4 slices eggplant bacon 1 teaspoon vegan mayo Romaine lettuce  2 slices vine-ripened tomato 2 slices gf bread

Marinate sliced eggplant for 30 minutes. Fry, dehydrate or bake. For frying: fry on each side, about 5 minutes.

For dehydrating: dehydrate @ 110°  for 3 hours.

For baking: bake @ 300° for 25-35 minutes.

Toast bread. Spread vegan mayo on top. Layer eggplant bacon, lettuce, and tomato  on top.
