Gingerbread Energy Bites

Ingredients: ½ cup dates 1 cup gluten free rolled oats ½ cup walnuts 1 teaspoon cinnamon 1 teaspoon ground ginger ¼ teaspoon allspice ¼ teaspoon nutmeg

Ingredients: 2 teaspoons blackstrap molasses 1 teaspoon vanilla extract 1 tablespoon peanut butter Pinch salt  ¼ cup dark chocolate baking chunks 1 teaspoon coconut oil

Soak dates in hot water to soften. Add all ingredients to a food processor. Mix until well combined, stopping to scrape down the edges of the food processor.

Form mixture into balls. You'll get 12-14 energy bites, depending upon how big you make them. Melt chocolate chunks in microwave at 30 second intervals until melted. Mine took 1 minute total.

Add coconut oil to melted chocolate. Mix well. Dip each energy bite into the chocolate so that half the bite is covered in chocolate. Place on parchment paper and refrigerate so the chocolate can set.
