Maple Dijon Baked Tofu Sandwich

Ingredients:   Maple Dijon Spread:  ¼ cup  vegan mayo  2 tablespoons maple syrup  2 tablespoons Dijon mustard

Ingredients:   Sandwiches:  Maple Dijon Baked Tofu (whole batch)  6 slices gluten free bread toasted  6 slices tomato  6 slices of onion  3 pieces of Romaine lettuce

Maple Dijon Tofu:   14 ounce extra firm tofu drained and pressed  3 tablespoons maple syrup  3 tablespoons  Dijon mustard  Salt and pepper  Olive oil

Mix maple syrup, Dijon mustard, salt and pepper. Slice tofu into large ½" slices. Place tofu slices in marinade and marinate for at least an hour to overnight.

Spread olive oil on a parchment lined baking sheet. Place tofu on top. Bake at 400° for 20 minutes, flip, and bake for another 20 minutes at 400°.

Slather Maple Dijon Spread on toasted bread. Top with Maple Dijon Baked Tofu, tomato, onion, and lettuce.
