Strawberries and Coconut Cream

Ingredients:      13.5 ounce full fat coconut milk  1 teaspoon vanilla extract  1 cup chopped strawberries

 Put coconut milk into fridge overnight so it solidifies on top. Scoop out the solid part. With either a hand mixer or Nutribullet, whip with vanilla extract until it is light and airy.

 Layer strawberries and coconut cream in a dessert glass or bowl.
