Tahini Noodles

Ingredients: 7 ounces Pad Thai rice noodles ¼ cup tahini ¼ cup water 1 tablespoon lemon juice 1 clove garlic minced ½ teaspoon minced ginger 2 teaspoons maple syrup

Ingredients: 2 teaspoons low sodium gluten free tamari 1 teaspoon sriracha sauce Salt and pepper Chopped green onion (optional) Red pepper flakes (optional)

Mix tahini, water, lemon juice,minced garlic, minced ginger, maple syrup, tamari, sriracha sauce, and salt and pepper.

Bring a large pot of water to a boil. Add rice noodles and cook 5-7 minutes (depending upon the size of noodles), or until tender but still chewy. Drain water.

Toss noodles with tahini sauce. Divide into bowls. Sprinkle chopped green onions and red pepper flakes on top.
