Tofu Noodle Soup

Ingredients: 1 medium onion 1 garlic clove 2 celery stalks 2 carrots 2 tablespoons olive oil 6 cups vegetable broth

Ingredients continued: 3/4 teaspoon dried thyme 1 bay leaf 2 tablespoons tamari 8 oz. pasta salt and pepper savory baked tofu

Cook onions, carrots, and celery until softened.

Add vegetable broth, herbs, and noodles. Cook until noodles are tender, then add tofu.
