Tofu Ricotta Stuffed Breadsticks

Ingredients: pizza dough 1/2 batch tofu ricotta olive oil sun-dried tomato sauce or marinara sauce

Tofu Ricotta:  14 oz firm tofu 1 tablespoon lemon juice 1 tablespoon dried basil 3 tablespoons nutritional yeast 1 clove garlic 1 tablespoon olive oil  salt and pepper

Tofu Ricotta: Mix all ingredients in a food processor. Breadsticks: Make dough according to directions.

Breadsticks continued: Mix Italian seasoning into dough and let rise if needed. Sprinkle flour or cornmeal on cutting board.Roll out the dough and slice.

Spread tofu ricotta down the center of a strip. Fold over the dough so that the sides meet. Roll into a breadstick. Repeat with the rest of dough.

Place on an oiled parchment lined baking sheet. Bake for 18-20 minutes, or until golden brown.
